Clotted cream is made by gently baking the cream from cows milk until a golden crust forms. It is then removed from the oven and cooled allowing it to thicken and turn a golden colour.

It has the highest fat percentage of all creams at 55% meaning it can be heated to a high temperature and boiled without splitting.

Creme fraiche is similar to sour creme, but it has a milder taste. It is made with pasteurised cream that has been thickened and soured with bacteria. It has around 48% fat so does not curdle when cooked. Traditionally, it was made from unpasteurised cream that was left to ferment.

Low or half-fat creme fraiche is made by substituting some of the fat with natural stabilisers and thickeners so that it can still be used whilst cooking.
