Creme fraiche is similar to sour creme, but it has a milder taste. It is made with pasteurised cream that has been thickened and soured with bacteria. It has around 48% fat so does not curdle when cooked. Traditionally, it was made from unpasteurised cream that was left to ferment.

Low or half-fat creme fraiche is made by substituting some of the fat with natural stabilisers and thickeners so that it can still be used whilst cooking.

Soured cream has around 18% fat content. It is treated with lactic acid giving it a tangy taste and it has a thick texture. It can’t be boiled as it will split/ curdle.
